I don’t know about you but it is always a struggle for me to come up with week night meal ideas on a daily basis. It is stressful planning the menu in advance, make the list of items to buy and do the shopping so I can make healthy and delicious meals for my family consistently.
As a busy parent, I am always searching for fast and easy dinner recipes. Improving menu ideas and adding new recipes to my list is always a thing for me. Over the years, I developed recipes and made modifications to dishes that interested me which I found online.

Pulling a dinner together in no time is seriously an art. And I am not going to lie, there were times when I got really frustrated with our weekly dinners. I found myself resorting to taking the easy way out way too many times..like freezer food, mac and cheese or worse, take outs. Okay, doing this once in a while is perfectly fine as we have a life other than constantly planning what’s for dinner. But it certainly helps to have a resource at hand to guide you when you go blank standing in the kitchen wondering what to make.

This is a round up of some of the recipes I created in the past keeping busy families in mind. I am also including few recipes that are recommended by my food blogger friends as well- more the merrier, right?
These are the types of recipes you can make in 30 minutes or less without the need to go and do a bunch of shopping-7 main ingredients max. That’s it!
PRO TIP:Prepping for the week in advance is key. Cut up your vegetables and meat beforehand and throw them in the fridge. This will certainly help to keep your cooking time to the minimum when you are pressing for time during the week.
Sharing first is Ground Beef Stroganoff which requires only 5 ingredients and quite easy to make-perfect for your busy weeknights. One of the easy dinner recipes for families, this is new on the blog so yay!
5 Ingredient Ground Beef Stroganoff
1.1 pound lean ground beef
2. 1 can cream of mushroom soup
3. 1 cup of sour cream
4. 1/4 green onions
5. 1 package egg noodles
(Optional salt and pepper to taste)
1. Prepare the noodles as directed on package.
2. Brown ground beef in a large skillet, drain grease.
3. In a medium bowl, mix together soup and sour cream.
4. Add the mixture to the meat and heat over low-medium heat until sauce is simmering.
5. Gently mix in the green onion, and salt and pepper to taste.
6. Pour mixture over noodles and serve.
See, quite easy! And did I mention it tastes so good? Winner! 🙂
Like the name, this is a perfect choice if you are in a hurry and need to whip up something fast. Requires 7 ingredients but a few of them are usually staples in your kitchen which makes an extra shopping run unnecessary.
Avacado Egg Wraps
Now, this recipe could easily serve your breakfast, lunch or dinner needs and it is also one of the popular recipes on the blog.
Very healthy, I guarantee your whole family will love this yummy wrap. Avacado is really a game changer!
But I must confess, it takes a lot more than 7 ingredients but most of them are seasonings you might use regularly. So no extra shopping needed. If there are leftovers (which I don’t think there would be 😉 ), keep it in the fridge to eat for the rest of the week!

Her Portobello Rosemary Garlic Burger Stacks calls for a lot of ingredients and a total of 40 minutes cooking time. But the main ingredients are less than 7 and if you prep beforehand (all the cutting and such) it only takes 20 minutes to finish and put it on the dinner table. Awesome! I must say her ‘no cook dinner solutions’ are a masterpiece and it is something every busy family should know about! I mean, no need to desperately raid your freezer or run out to buy take outs when you can get away with whipping something up for the whole family without wasting money AND WITHOUT COOKING. Great!
