Fan of cole slaw dressing recipes? I have a great one to share with you today. Creamy avocado takes cole slaw dressing to a whole new level! This decadent dressing is packed with fresh herbs and lots of healthy avocado.

Avacado Cole Slaw Dressing Recipe
Dressing Ingredients
2 avocados
1/2 cup parsley, fresh, packed
2 tablespoons cider vinegar
2 tablespoons lime juice
2 tablespoons coarse ground mustard
1 tsp honey
1/2 tsp salt
1/4 tsp black pepper, ground
3/4 cup extra virgin olive oil
2 tablespoons fresh chives, finely chopped
Cole Slaw Ingredients
1/2 head of cabbage, green, shredded
½ head of purple cabbage, shredded
4 large carrots, peeled and shredded
Avocado Dressing (above)
Directions
1. In a blender, combine all of the dressing ingredients, except the chives, and process until smooth. Stir in the finely chopped chives.
2. In a large bowl, combine the cabbages and carrot and toss with the dressing mixture. Chill 1 hour before serving.
3. Store leftovers in an airtight container for up to 1 week.

You mention sour cream in the description but the recipes doesn’t mention it.. Did you replace it with the olive oil?
Hi Shirley, thank you for catching that! I have no recollection of why I would include sour cream in the description. I have edited that now, and yes, olive oil is a good substitute and vinegar will add the extra tanginess if need be.
