Well, guess what? I am back with a yummy recipe for you to try before these last of summer days are over. If you could use one more summer salad recipe idea, I have just the thing for you.
I made these avocado and tomato salad the other day and decided I had to share it with you guys. Quite easy to make, avocado actually imparts that healthy twist that we need so much in our diet. By the way, did you know avocado can lower risks of cholesterol and that it contains more potassium than bananas? Yes, that’s right! Besides, tomatoes and avocados are a great combination, you will see 🙂
So without further ado, here is my recipe for one of the best tomato salad recipes with an avocado twist!
Avocado and Tomato Salad
Ingredients
1/2 Large red onion
2. 4 Roma tomatoes
3. 4 Small-medium avocados
4. 1 Lemon
5. 1/4 Teaspoon pepper
6. 1/2 Cup chopped cilantro
7. 2 tbsp olive oil
Directions
Dice onion, tomatoes and avocados, adding to large bowl. Squeeze the juice of one lemon over salad for flavor and to keep avocado fresh and green. Add 1/4 tsp pepper or more to taste, and the chopped cilantro. Mix in the olive oil till all the ingredients are lightly coated. If you need a little more olive oil, feel free to add more. Cover and chill for at least 1 hour for the best results.
