Ingredients

Sugar cookies (You can buy premade, use a break and bake variety, or make your own)
Fresh strawberries, rinsed
Gay Lea’s Real Whipped cream
Crème de Mint flavoring, optional
Sugar, optional

Use your own preferences when deciding on the cookie for this project. As mentioned you can use pre-made, break and bake, or use your favorite sugar cookie recipe. You do want the cookies to be smaller, bite size if at all possible. That is what will keep them portable and easy to enjoy. If there is another cookie you wish to try this recipe with, go for it! Any shortbread or vanilla flavored cookie will do the trick and work well with this recipe.

Directions

1. Begin by chopping your strawberries.

A rough chop works, just as long as they are small cubes or chunks when done. If you wish for some extra sweetness, feel free to sprinkle the chopped strawberries with a dusting of granulated sugar.

2. Soften the Gay Lea Real Whipped cream by stirring it. Add a few drops of Crème de Mint flavoring if you wish for your cakes to have a little minty flavor. If not, you can skip this step. Should you want a little color, don’t be afraid to add a drop of food coloring to the whip. It is an easy way to add a pop of color.

3. Spoon some whip cream onto a cookie and then top with the chopped strawberries. You can either add another layer of whipped cream or go ahead and top with an additional cookie to finish the sandwich off.

Your Canada day dessert is now ready to be enjoyed! Serve them with milk, coffee, or even tea for an after dinner treat that you can’t beat!
