Okay, time to come clean.
I am not good at baking! (Gasp!)
While I could skirt around less complicated recipes for baking, I was never good at ambitious projects in the kitchen with my baking skills. I manage to make cookies and bread without incidents somehow and even with that, I must tread lightly. So, you could imagine, baking a cake, that too a cupcake is a distant dream for me…well, it remained as a dream until recently!
While looking around for goodies to make for this Halloween, I happened to come across a recipe (or rather devise one tailored to my level) which appeared to be quite easy to execute. I was so tempted to try my hand at the cupcake in question even though the ingredients I was supposed to be using to bake this were totally under the risk of to be thrown out quite possibly as a result of a failed mission.
But a risk taker that I was all my life, I went ahead with my cupcake adventure…and I am so glad that I did not let my ‘baking phobia’ to get ahead of me with my Halloween Cupcake project.
Because, for the first time in life, I succeeded in baking a cupcake of my own! I was so pleased with the results that I wanted to share it with all of you. And I hope you will find this Halloween Cupcake as yummy and fab looking as I thought it did
Ingredients for the Halloween Cupcake!
2 cups Flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 cup milk
1 teaspoon vanilla
Ingredients for Frosting
2 cups powdered sugar
2 tablespoons butter, softened
2 tablespoons milk
1/2 teaspoon vanilla
Instructions
Preheat oven to 375F.
Line muffin cups – set aside.
Cream butter and sugar until light and fluffy. Beat eggs in, one at a time. Add flour, baking powder, and salt. Add milk. Beat well. Stir in vanilla. Divide evenly among liners and bake for about 16 minutes or until toothpick comes out clean.
Allow to cool completely before frosting.
For frosting, beat all ingredients with electric mixer until light and fluffy.

You’re certainly not alone. I’m no good at baking or doing anything cooking related either but I do like to try. This looks yummy but not sure if I would try the frosting. I would much rather buy it to be on the safe side. Pinning. 🙂

Those are super cute, and they look super easy for being homemade. I must confess I am not a terrible baker, but I have never made a cake or frosting from scratch. I am going to have to try to make these

Love Halloween and LOVE cupcakes. My favorite is a chocolate cupcake with a rich buttercream or vanilla frosting.

i need to start using a bag to put on frosting because it makes it look that much better instead of trying to put it on with a knife or anything else.
I know, you must use a tube for frosting 🙂 Otherwise, it gets messy in seconds… at least for me lol

Being a baker, I always love when people find a recipe that works for them.
My family would love these, they look delicious! I never wanted to bake because I was always scared of messing things up, but I had to make a cake for a friend and it was pretty good and since then I have become really good at baking. I love the holidays because I get to show off, LOL!
