At last, I came around to delivering the final piece of Healthy Cookies series!
Yes, it took a long time I know, but life happened in between and I had to put Part 3 of Healthy Cookies series in the back burner for a while. Hope you understand!

Every kid loves cookies and especially after school these are the perfect snacks when they arrive home. Unfortunately they aren’t always the healthiest of choices. Very much like the Cowboy cookies and Flourless Chocolate Chip cookies, my latest Honey Dream Cookies will also pass the test as a ‘healthy cookie’ which the kids will sure find appealing for their taste buds. Parents can rest assured that it is good for the little ones, health wise as well. Everybody wins! 🙂
So, without much ado, let me present to you,
Honey Dream Cookies
Ingredients
1/2 Cup Flour
½ Cup Almonds ( I purchased sliced and added it into the mix. But you can also grind into powder using food processor)
½ Teaspoon Baking Soda
½ Teaspoon Baking Powder
1 Teaspoon Salt
1/2 Cup Raw Organic Honey
1/4 Cup Coconut Oil
2 Tablespoons Applesauce
1 Egg White
Directions
Preheat oven to 350 degrees. Spray cookie sheet with non-stick spray and set aside. In medium bowl mix together honey, coconut oil, applesauce and egg white. Add in dry ingredients until just blended. Place by spoonful onto cookie sheet and cook for 6-8 minutes or until just done and golden brown. Overcooking makes these VERY hard so be watchful that they are “just” done.
So, there you have it! A fresh made batch of Healthy cookies which your kids would sure find yummy!

These certainly do sound good-and if I do over bake them-they sound good for dunking which should soften them up a bit! Nothing I like better then dunking cookies in my coffee!

They look yummy. I think it is nice that you like to use such natural ingredients. I suggest that you check out ancient or heirloom wheat flour, or spelt flour. Nice post! 🙂
Healthy yet delicious, those are my kinda cookies! I love that they call for applesauce.

I tend to use honey in lot of recipes as a substitute for sugar, but I never thought of using it for cookies. Thanks for this recipes, I am saving it and sure my girls will love it.

I always try to have some local honey because of it’s anti-allergen properties. These cookies would be a great way to use some of it. 🙂
