Smashed Cheesy Bacon Potatoes- Recipe

 

There is a special potato recipe I want to share with you guys today! Smashed Cheesy Bacon Potatoes. They’re amazing.  Period.  Whip these up and you’ll see how fast your family devours them!

Red potatoes are a bit creamier than some other varieties.  Make sure to get the small ones to keep your cooking time down. Paired with the crispy bacon and melted cheese, you can’t go wrong with these – it’s like taking a baked potato to a whole other level!

Smashed Cheesy Bacon Potatoes Recipe

Ingredients

12 small red potatoes

4 slices of bacon

1 cup shredded cheddar cheese

Kosher salt

Olive oil

Fresh ground black pepper

Chives

Directions

In a medium saucepan over medium heat, boil the potatoes (skin on) in lightly salted water until fork-
tender, about 12 minutes. Meanwhile, cook the bacon in a skillet until it is slightly crispy, but not browned. (It will cook a bit more in the oven).  Remove the bacon to a paper-towel lined plate and let cool a moment or two before giving it a rough chop.

Preheat the oven to 475-degrees and slightly spray with cooking spray. Using a slotted spoon, remove the potatoes from the water and place them on the prepared baking sheet. With a potato masher, press down to break open the potatoes and slightly mash each one. You want there to be lots of places for the flavors to seep into!

 Drizzle the tops of the potatoes with the olive oil – you don’t want to saturate them, just enough to add some flavor and help them crisp up. Next, sprinkle the potatoes generously with salt and pepper. Finally, top with the cheese, bacon and chives.  Bake until the cheese is melted and the potatoes are golden brown – about 15 minutes – but you’ll want to watch them as they will go from golden to burned very quickly.

 Serve with sour cream, if desired.
